Homemade Almond Milk

Ingredients

  • almond milk 51 Cup of Almonds (soaked in cold water over night)
  • 3 Cups of Water
  • 1 Teaspoon of Sweetener (optional)

 Here’s what to do:

  • Soak the almonds over night or for 8 hours.
  • Rinse the almonds and throw away the water.
  • Place almonds in blender and add 3 cups of cold water. Blend until you get a white “milky” solution.
  • almond milk 3Using a cheese-cloth, strain the milk (I used the instrument on the picture, this is what we use in Venezuela to filter coffee..it works just fine!); place cloth over a deep bowl and pour the almond milk; the liquid should go through and the cloth should retain the leftover shredded almonds. Squeeze out as much milk as possible.
  • Place in sealed container and refrigerate!

With the leftover shredded almonds you can make Almond Flour:

  • Place the shredded almonds in the oven at 180 C for about 20 minutes, until dry and toasted.
  • Take out of the oven and allow to cool.
  • Place in blender and shred for 30 seconds to 1 minute, until flour consistency is achieved!

Compared to cow milk, almond milk is a much healthier choice! Give it a try and introduce it in your everyday diet!

About: Almond Milk!

almond milk 1One question I get asked all the time is “if I drink almond milk?” The answer is YES! Most of the time I prefer drinking almond milk just because of it’s overall nutritional value! It’s something I consider to be a really Healthy Switch. Almond Milk is high in a number of vitamins and minerals, such as vitamin E, magnesium, calcium, iron, among others, while at the same time being low on calories! A cup of almond milk contains about 40 calories, only 3 grams of (healthy) fats (vs 8 grams in regular milk), and about 3 grams of carbs. Until Recently, I had NOT found almond milk at the supermarkets. I had found Almond DRINKS, which when looking at the nutritional value, you could almond milk 4easily see that each cup, though it was only about 50 calories, it had almost 10 grams of carbs/sugars! This is NOT a healthier option than regular milk….You want the nutritional info to look like that in the picture! So if, you are in Greece, look out for this brand of Almond Milk. In today’s post I want to share what a regular weeknight dinner looks like in my house! If you have been reading my posts, you know that for most days, I try to eat as healthy as I can…but the same cannot be said for my Boyfriend. So what I do is I make the “base dinner” or proteins the same for the both of us, but different side dishes to go with it for each!

For Tonight’s dinner I made Oven Fried Chicken Nuggets with Mashed Potatoes. Since the nuggets are oven fried, I consider them pretty healthy, the label said that per 100g of product it contained 12 carbs and 8 fats, which I consider acceptable since throughout the day I eat minimal amounts of fats and carbs, so it balances out for me, and it’s nuggets….my bf loves them!; to go with these nuggets I made Traditional Mashed Potatoes for my Boyfriend, and Healthy Low-Carb, Low-Fat Cauliflower Puree or Low Carb Mashed Potatoes!

Let’s do a quick Overview:

Ingredients

Full Fat: Traditional Mashed Potatoes vs Full Fit: CauliFlower Mashed Potatoes

700 grams of Potatoes (120g Carbs) vs 700 grams of Cauliflower (35g Carbs)

50 grams of Butter (40g Fat) vs 2 tbs of Philadelphia Light Cream Cheese (4g Fat)

4 tbs of Heavy Cream (22g Fat) vs 2 tbs Mozzarella Cheese (5g Fat)

+ 2 tbs of Parmesan Cheese (3g Fat)

Both recipes yield two servings, for the Full Fat Traditional Mashed Potatoes we have aprox. 60g of Carbs and 31g of Fat per serving; and for the Full Fit Cauliflower “Mashed Potatoes” aprox. 17g of Carbs and 6g of Fats per serving.

The benefits of doing this, for me are obvious: On the one hand I cut down on fats and calories by not frying the nuggets, but I am aware that they do contain carbs…so I balance these carbs out in my dinner by having “mashed potatoes” made of veggies, Cauliflower.

In other words, For me, I make this “Clean Version of Nuggets & Mashed Potatoes”, a well balanced Protein-Carb dinner that is tasty, satisfying and easy to make; And for my Boyfriend a less healthy, full carb, slight variation of what I eat. For us, this is a healthy and happy compromise!

Traditional Mashed Potatoes

Mashed Potatoes 1Ingredients

  • 3 Medium Size Potatoes (about 700 grams)
  • 50 grams of Butter
  • Heavy Cream or Full Fat Milk
  • Chives to Taste
  • Salt, Pepper and Nutmeg (or any other spices you might want)

I have mentioned before that since me and my bf have different tastes in food (I love healthy veggies, he does not), so I a healthy compromise for Dinner time for us, is making the same protein for both, but different side dishes. In this case, while he will have this traditional Mashed Potatoes as a side, I will have my Healthy Cauliflower Puree as a side.

Here’s how I make the traditional Full Fat Mashed Potatoes:

  • Mashed PotatoesPeal the potatoes and place them in a pot filled with water over high heat in the stove. Allow for the water to boil and the potatoes to become very, very soft. I generally think that when making mashed potatoes, there is no such a thing as “over-cooking” the potatoes, the softer they are, the easier to mash!
  • Once the potatoes are ready, rinse out the water and place them back in the pot.
  • Using an immersion blender, puree your potatoes; I actually don’t have an immersion blender so I do it manually, with a hand tool for mashing potatoes.
  • Place the mashed potatoes over medium to low heat and add the butter, the chives, salt and spices.
  • Keep mashing and mixing the potatoes, either with the immersion blender or a wooden spoon.
  • If you find the mixture to be too thick, add a tablespoon of milk or cream until you reach the desired consistency.
  • Top with more chives for decoration and it’s ready!

Healthy Homemade Frozen Greek Yogurt

  • 300 grams of Plain Greek Yogurt 2%
  • 30 grams of Honey
  • 30 grams of Milk (2% or any other kind you prefer)
  • Vanilla Extract or Cinnamon 
  • 1 Banana (Optional)

It was my birthday recently and as one of my presents I got an Ice Cream Maker! To be honest it is super easy to use and the texture of the Frozen Yogurt is so much more creamier than I expected it! But if you don’t have an Ice Cream Maker, you can try my recipe for Strawberry Oatmeal Frozen Yogurt  and replace the strawberries for banana!

This is not be easier to make:

  • In a blender add all of the ingredients and blend until smooth.
  • Add to Ice Cream Maker and follow the manufacturer’s instructions.
  • Chill in Freezer another 30 mins for better consistency.

Easy, Breezy…..I told ya!!

Enjoy this Ice Cream on top of some healthy Fruits on Wine!!

Blueberry Bundt Cake

Ingredients

  • Blueberry Bundt Cake 11 1/2 Cup of Cake Flour 
  • 1/2 Stick of Butter (about 55 grams)
  • 1 1/2 Cups of Sugar
  • 3 Eggs
  • 1/2 Cup of Milk 
  • 1 Tablespoon of Vanilla extract. 
  • 1/2 Cup to – 1 Cup of Fresh Blueberries
  • 2 Tablespoons of Confectioner’s Sugar

 

Blueberry Bundt Cake 4Bundt Cakes are some of my favorite cakes in the world!! My mom makes the best Bundt Cake EVER!! So of course I am slightly obsessed with this type of cake! I have this super quick, super easy, NEVER-FAIL recipe!! Even my BF loved this Blueberry Bundt Cake I made, even though he doesn’t like sweets or fruits!!! So that should give an indication of how good it is!!!

Here’s what I did:

  • Make sure all ingredients are at room temperature.
  • Using an electric mixer, beat the butter and sugar in a bowl until you get a cream-like consistency that is a light yellow color.
  • Add the eggs, beating well after each addition.
  • In a small bowl, mix the flour and vanilla (I did not have cake flour so I used all purpose and added baking powder); Add the flour little by little, in badges, Alternating the adding of the Flour with the adding of milk, and beating well after each addition. You are done with the electric mixer.
  • Blueberry Bundt Cake 3In a separate bowl, Take 2 tablespoons of flour and powder the blueberries and set them aside.
  • Prepare the mould you will bake your cake in, I buttered the mould and covered it in flour. When the mould is ready, spread about 1/3 of the Cake Mix into the mould, then add about 1/2 of the blueberries, cover the blueberries with cake mix, add another layer of blueberries and a final layer of cake mix.
  • Place in a Cold oven at 150C for 1 hour; increase the temperature to 175C and bake for another 15-30 mins or until you stick a tooth pick and it comes out clean.

Easy, breezy, right?? When ready I just sprinkled 1-2 tablespoons of Confectioner’s Sugar on top and Voila! It’s ready to serve!!! Perfect to go with some afternoon Tea!!

Do It Yourself: Baby Shower Give-Aways

DIY Party Give AwaysHey, hey, hey!

If you’ve seen my  previous posts you know that I threw a Baby Shower for my friend the other day, for which my friend and I made all the decorations ourselves.

Originally, For the give away gifts we planned to get some small flower plants to give to each guest, but my friend was really sick the entire week before the shower and thus we didn’t really have time to go buy the plants we wanted to give away. So the day of the party we had to come up with something cute to give that was also quick and easy to make ourselves right then and there! We went to this store here in Greece called “Jumbo”, which pretty much has anything and everything for really, really cheap prices. So we found some cute baby bottles, some nice colored ribbons and loads of colorful candies to stuff each baby bottle with!

DIY Party Give Aways 4And so we made some Candied Baby Bottle Give Aways:

  • 15 Baby Bottles (or however many you need)
  • 2 packs of Ribbons (for different colors)
  • About 7 bags of candy, this will vary depending on what you use!; We got:

3 x 500 gr Chocolate Filled m&m ‘s

3 x 500 gr Peanut m&m’s

1 x 500 gr Sorted Fruit Candies

What we did next:

  • Fill up each bottle with the different candies! Mix it up however you want!
  • Tie a ribbon around the top of the bottle.
  • Add a cute note (if u want) for guests to remember the shower by.

And we are ready for the Baby Shower!!
